This is Thuy from Shunsai Washoku Kutsurogi.
Today, I’d like to introduce one of our signature dishes: Kutsurogi’s Iron
Skewer Grill.
Our skewers feature a wide selection of seafood—salmon, yellowtail, tuna,
sea bream, fresh octopus, scallops, and more.
Among them, the salmon and yellowtail are intentionally grilled just until
half-done. Using fish so fresh it can be served as sashimi, we cut it into
thick chunks with the skin on and lightly sear the surface.
The result is beautifully aromatic on the outside, while the inside stays
tender and almost melt-in-your-mouth.
It’s what we like to call “seafood tataki on a skewer”—a style that truly
highlights the natural flavors of each ingredient.
The other seafood items, such as sea bream, octopus, and scallops, are
grilled through a bit more thoroughly, giving them a pleasant firmness and
rich, smoky aroma.
When you order a mixed platter, each skewer already comes seasoned, so we
recommend taking your first bite as is.
Then, if you’d like to explore more flavors, try pairing them with ponzu or
our house-made miso for a delicious twist.
